Raspberry Cobbler Bars: A Healthy Valentine’s DessertIt’s that time of the year, where heart shaped red or pink goodies are every place you turn. This year you can add to the love. Let everyone fall in love with your red dessert. Here is a delicious and easy recipe to bring to the office or make for your significant other. This New England style light, fruity, crumbled dessert will put a smile on anyones face. The best part is, leftovers make an awesome breakfast bar! These bars are completely fat free. I suggest using fresh fruit because it makes the bars moist.
Quantity: 8-14 Bars
Time: 35 Minutes
• 1.5 cups spelt flour or oat flour (to make oat flour, you can grind oats in a food processor)
• 1/2 tsp. baking powder
• 1/4 tsp. salt
• 1/2 cup applesauce
• 1 and 1/2 tsp. cinnamon
• 1/3 cup brown sugar
• 2 cups (8oz.) fresh or frozen berries
• 2 T maple syrup or agave
• 2 tsp. cornstarch
• 1 tsp. pure vanilla extract
Stir together the first six ingredients. Scoop half of the dough into a small, oiled glass dish (or any small pan). In a separate bowl, stir together the other ingredients. Layer them into the pan, then top with the rest of the dough from the first pan. Bake for 35 minutes at 350F, than cool before cutting.
Oh, this is also delicious served warm with vanilla ice cream on the side. However you decide to serve it, enjoy!
